Grading and Selection

It’s all about the taste and the quality – and don’t let’s forget the consistency!  That’s why EVERY single vat that crosses our door is hand-selected for taste, appearance, and functionality. 

Cheese grading is our skill.  David and Kevin are never happier than with their grading irons by their side and need no second bidding.  From generic mild, to exquisite expensive vintages, we literally go to the cheese and grade it on our quest to deliver the right products for our customers.

And our customers have many different needs. One size does not fit all.  Flavour profiling to meet different briefs is what we do every day and this selection process is a real art.  Our ‘grading and selection’ service forms bedrock of our business.   Furthermore, it’s all about delivering the right product at the right price.

David and I have both worked on dairy farms and been cheesemakers in the past. We’ve literally had our hands in the vat. We understand the process, from milking and filling the vats, to cutting and pressing the curds. We’ve watched countless vats of cheese journey through the maturing process, tasting and assessing along the way. We’ve both working in packing facilities, so we understand the importance of functionality to retail slicing and packing. For years we have worked with major retailers to get the best for consumers both in terms of value and quality.
